In 2010, Dr. Matthews graduated from North Carolina State University with a Bachelor of Science in zoology. She continued her education at North Carolina State University and earned a Doctor of Veterinary Medicine in 2017. Following graduation, Dr. Matthews completed an anatomic pathology residency at the Cummings School of Veterinary Medicine at Tufts University.
Throughout her academic career, Dr. Matthews completed various externships gaining experience at various clinics in North Carolina.
